INGREDIENTS
1/2 cup of frozen shelled edamame.
3 ounces of uncooked soba noodles.
1/2 cup of sliced green/snow peas.
1 tablespoon of dark sesame oil.
1 tablespoon of rice vinegar.
1/2 tablespoon of lower-sodium soy sauce.
1/2 tablespoon of yellow miso.
1 teaspoon of brown sugar.
1 teaspoon of grated ginger.
1/8 teaspoon of kosher salt to taste.
1 cup of sliced cabbage.
2/3 cup of sliced green onions.
1 large and sliced carrot.
Sesame seeds for topping.
INSTRUCTIONS
Place a saucepan over medium heat, add in water then bring to boil. Once the water boils, add in the edamame and soba noodles then cook for about two minutes. Add in the peas and cook for about one minute until the noodles become soft. Drain off the water, rinse the noodles, peas, and edamame with clean water, drain again and set aside.
Using a large mixing bowl, add in the oil, vinegar, soy sauce, miso, brown sugar, ginger, and salt to taste then mix properly to combine. Add in the noddle, peas, edamame, cabbage, carrots, and onions then toss everything to combine.
Serve in serving bowls with sesame seeds as topping, enjoy.
